Experimenting with a Plant-Based Diet


I happened across Deliciously Ella hearing one of my favorite YouTuber's share her experience switching over to a plant-based diet. She raved about major changes in her health, appearance and an increase in energy since being inspired by a handful of plant-based diet bloggers. At the time, I found myself desiring an overall healthier diet and lifestyle, so naturally I was intrigued.

I grew up in a home where eating whole, nutritious foods was important. After I moved out, and started working full-time I gravitated toward convenience. Not that I was making totally unhealthy choices, but quick and easy was much more important than a well-rounded diet.

I discovered Deliciously Ella's blog at the perfect time. Although I don't ever see myself becoming a vegan, nor do I eat this way 100% of the time, I still have seen major benefits in my overall health. I just feel better,  have much more energy and it gives me a greater zeal for life and sense of well-being!


The Deliciously Ella cookbook and blog, as well as iPhone app and YouTube, channel are a great spring board towards a healthy lifestyle. The recipes are delicious, easy to make and the photography is stunning! Since trying out several recipes from her book, I have become inspired to start creating some my own recipes. This Sundried Tomato Hummus is one of them. I not only modified the recipe but found my self starting with dried beans instead of canned, which is something I would never have attempted before!


Her work has change the way I view food, not just how I eat, but the preparation behind it as well. It has been a really fun way to express my creativity, and I can think of no better way to do that than to start with whole foods, getting down to the basics and trying to obtain them as close as possible to the way God intended them!
